Bone Family
Duncan and Elizabeth Bone founded Fortress Cafe to introduce healthier food options in Jackson, complementing the fresh coffee Duncan's dad, Jim Bone, is roasting. The roasting company was originally founded by Thomas Hess, Elizabeth's brother, making this a true family affair!

Following significant health scares, the Bones expanded their mission by starting a farm which will offer regenerative, organically grown produce and livestock, ensuring clean ingredients are available for all.
The Bones have four young boys and enjoy being active, drinking coffee, and fostering a thriving community space. Duncan’s background in personal training and health coaching enhances the cafe’s offerings of quick, healthy bites.
